Safari Enhancer allows such customization for Safari on a Mac.

It's useful for accessing sites that incorrectly insist on IE, which
is essentially obsolete on a Mac. Many (but not all) sites that
require IE work with Safari masquerading as IE through use of Safari
Enhancer.
